why does no one ever do a 6.1 or 7.1 soundtrack? Is it to much to ask for? I have seen star wars and a few others but mostly 5.1 whats the deal folks

Because the vast majority of people have, at best, a 5.1 system, or a 2 or 2.1 system. In addition (and I'm speaking from experience on this as a film editor and sound designer), even when a 7.1 mix is made, the extra 2 channels are often little more than either a duplication of the rear channels from a 5.1 mix OR a mixture of the rear channels with the front left and right channels, and thus you're rarely going to hear anything with a 7.1 mix that you aren't going to with a 5.1 mix. The only time such a setup is anything but a waste of money is if you're in an incredibly large room (like a movie theater) and then the extra speakers are just to make sure you have adequate levels to fill the space.

And FYI, while I can't say it's never been done, I can't imagine why anybody would do a 6.1 mix. With stereo (2.0), you have a left and right speaker. With 2.1, you've got the left and right speaker plus a sub woofer. With 5.1, it's a front left and right, satellite (rear) left and right, a center speaker, and sub woofer. Anything above that, and you just add speakers in increments of two for the sake of balance, hence going from 5.1 to 7.1.

Mixers don't do 6.1 mixes, and home systems that employ more than 5.1 are a waste of money.
