True, but the "original media" isn't really relevant since when encoding you're dealing with blu-ray or HD sources which use bitrates up to 10x higher than the "original media" (by which I assume you mean digital film stock.

What the bitrate needs to be in order to look good is wholly dependent on the size of the monitor you're going to be viewing on. You're mostly right, but you left out some details. 2250-2500 will make playback look pretty perfect on a 17-23" monitor or so, but the bigger the screen, the higher the bitrate needs to be. This guy's 1835 bitrate will probably look fine on a 15-17" laptop monitor, but that's it. It's going to look crappy on anything bigger. Also, quality is dependent on more than just bitrate. Depends on what kind of motion estimation method, how many reference frames, max B-frames, etc, etc, etc. A lot of encoders aren't up on the "advanced settings." From what I've seen of this guy, his stuff is hit and miss. Some of it is fine, and some of it is crap. Personally, I'd stick with someone I *know* knows what they're doing and gets it right EVERY time.
But you're absolutely right about the audio. It's entirely inadequate. There's really no excuse for going below 160 in AAC for two reasons: there's a VERY noticeable drop in quality below 160 (and even more so below 128), and going below that doesn't shrink your file size enough to justify the loss.
